In the asparagus, there is the tip, the tenderest part and the heel, sometimes a little harder. But the Landes asparagus is so good and fragrant, there is no question of losing a crumb ... Cooked in water, mashed and delicately tied with a little cream, a little butter and apple of earth, a nutmeg to enhance the taste, and you're ready to rediscover the scents of spring.

Heat over low heat in a saucepan, stirring lightly.
