Albacore tuna, also known as white tuna, go up along the Bay of Biscay in pursuit of schools of anchovies and sardines between July and October. It has been sinned for a long time in the Basque Country, and landed at the auction of Saint-Jean-de-Luz. We select and buy our lots of whole fish. The absence of freezing and the method of preparation of our fish allows us to obtain a quality product. The tuna loin thus retains its softness and flavor.
Ideal in Salad, to cook, or more simply plain on a nice slice of butter.
